 LEGENDARY HISTORY (1544)

In 1544, in the nearby Saint Hilaire abbey, a monk bottle a wine too early and for the first time, the fermentation happen in the bottle.

The monks wrote in their register that for the first time, “Blanquette” was “bubbly”!

At the time, they did not realize but they have just invented the world first sparkling wine, almost 150 years before Dom Perignon.

FANTASTIC TERROIR

In addition to this legendary history, Limoux has also a unique terroir, at the confluence between:
A Mediterranean climate: hot and dry, allowing a good ripening
The Pyrenees mountains: bringing freshness and acidity, thanks to the altitude of the vineyard

Farming “Organic” since 2020 with 1st certified wines in 2025.
Sustainable viticulture, using Terra Vitis approach, certified since 2013

A UNIQUE WINEMAKING STYLE

100% of the wines harvested by hand in cases

Each terroir is vinified separately until blending

Minimal intervention:
Low use of sulphites
No aromatic yeasts
Use only of neutral oak & foudres

Average ageing on lees of 30 months vs. legal 9 month

WHO IS FRANÇOISE ?

Took over the family winery in 1995, back to the roots leaving a managing position at L’Oréal
Pioneer winemaking style, focusing working on long ageing on lattes and altitude vineyards.
Led the way to the conversion to organic farming.
Founding member of the Vinifilles NGO, local organization supporting gender equality.
