NATURAL Natural Wines are farmed organically (biodynamically) and produced without adding or removing anything in the cellar. No additives or processing aids are used, and ‘intervention’ in the naturally occurring fermentation process is kept to a minimum. As such neither fining nor filtration are used and the result is a living wine - wholesome and full of naturally occurring microbiology. De Martino produce a natural wine called Viejas Tinajas. The wines are aged in old Amphorae and only use natural yeasts, no sulphur and is bottled unfiltered. ORGANIC Organic wines are made from grapes grown without the use of fertilisers, fungicides, and synthetic herbicides. Some use cover crops to provide a habitat for beneficial insects that are the natural enemy of problem species, or have sheep graze between the vines, eating the grass and weeds. The laws differ from country to country but in principle, they work with nature to increase their vineyard’s biodiversity. BIODYNAMIC Biodynamic farming is based on the principles of Rudolf Steiner, an Austrian philosopher scientist (1861 - 1925). The core idea is that the land and vineyard is a self-sustaining, closed system, while the philosophy also considers astrological influences and lunar cycles. Pesticides and fertilisers are banned and replaced by special soil preparations to enhance nutrients.
